Because per capita WAAAAAY more bicycles are stolen than motorcycles. And the odds of recovery are VERY LOW! This example is more the exception than the rule. Additionally, when a moto is stolen it is more likely to be parted out than a bicycle, hence the owner finding his bike mostly intact for sale on CL.
PS, You must live in a cave because I have heard of these kinds of stings with moto's as well. Just because it ain't on youtubes doesn't mean it hasn't happened.

Bike was worth $2500, some motorcycles are worth less.

Wow, almost the same thing that happened to me, except that I didn't confront the thief about the bike being stolen right away and waited until the cops got there by waiving a fake envelope with 'money' in it. The guy made a move to run but the cop was quick to slam him into the wall as soon as he made a move to run. Thief got arrested and they even found some meth on him so he got double screwed. Perhaps it's time to pull that video off the external harddrive and post it - it's not as entertaining as this chase video but justice was still served.

They have a UK or Aussie version of that where they set up and chase motorcycle thieves or regular thieves while there on motorcycles.

Its pretty rad

He handled it pretty well I think. I know for sure if they stole my bike I'd be in jail for assault. It's funny because my bicycle cost more than my super sport and my 998. At least insurance wise.
